Preheat your oven to 180°C (350°F). In a mixing bowl, combine graham cracker crumbs, melted butter, and brown sugar. Mix until the crumbs are evenly coated and resemble wet sand. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove and let cool.

In a large mixing bowl, beat the cream cheese until smooth. Gradually add the granulated sugar, mixing well. Add the sour cream, heavy cream, and vanilla extract, mixing until combined. Add the eggs one at a time, mixing on low speed just until incorporated. Do not overmix.

Bake the cheesecake
Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour.

Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours, preferably overnight, before releasing the springform pan. Serve chilled, and enjoy!
