Frying the Flounder

Prepare the Breading
In a shallow bowl, combine the flour, cornmeal, salt, black pepper, and cayenne pepper. In another bowl, whisk together the eggs and milk.

Bread the Fish
Dip each flounder fillet first into the egg mixture, allowing excess to drip off, then coat thoroughly in the flour mixture. Set aside on a plate.

Heat the Oil
In a large skillet, heat vegetable oil over medium-high heat until hot but not smoking.

Fry the Fish
Carefully place the breaded flounder fillets in the hot oil, cooking for about 3-4 minutes on each side or until golden brown and cooked through.

Drain and Serve
Remove the fried flounder from the skillet and place on a plate lined with paper towels to drain excess oil. Serve hot with your choice of French fries or Cajun fries and a sauce of your choice.
