Cool the Mixture
Allow the sweet tea to cool to room temperature. This is important to avoid killing the SCOBY.

Fermentation
Cover the jar with a clean cloth or coffee filter and secure it with a rubber band. Let it sit in a warm, dark place for 7-14 days. Taste periodically until it reaches your desired level of fermentation.

Flavoring (Optional)
If you want to flavor your kombucha, you can add ginger, fruit, or herbs after the initial fermentation. Pour the kombucha into bottles, leaving some space at the top, and add your flavoring.

Seal the bottles and let them sit at room temperature for an additional 3-7 days for carbonation, then refrigerate.
