Steak Preparation

Prepare the Steak

Remove the Wagyu steak from the refrigerator and let it come to room temperature for about 30 minutes. Season both sides generously with kosher salt and coarse black pepper.

Sear the Steak

In a large skillet, heat olive oil over medium-high heat. Once hot, add the steak and sear for about 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness.

Make the Au Poivre Sauce

Remove the steak from the skillet and let it rest. In the same skillet, add minced shallots and cook for 1-2 minutes. Add brandy or cognac, scraping the bottom of the pan. Once reduced, add heavy cream and simmer until thickened. Stir in butter until melted and combined.

Prepare the Potatoes

Peel and cut the russet potatoes into uniform sticks. Rinse under cold water to remove excess starch and pat dry.

First Fry

Heat vegetable oil in a deep fryer or large pot to 325°F (165°C). Fry the potatoes in batches for about 5-6 minutes until they are soft but not browned. Remove and drain on paper towels.

Second Fry

Increase the oil temperature to 375°F (190°C). Fry the potatoes again for 3-4 minutes until lightly golden. Drain on paper towels.

Final Fry

Return the oil to 375°F (190°C) for the final fry. Fry the potatoes for about 2-3 minutes until they are crispy and golden brown. Season with salt to taste.
