Prepare the Dough

    Make the Dough

    In a mixing bowl, combine the all-purpose flour and salt. Add the chilled cubed butter and mix until the mixture resembles coarse crumbs. Gradually add cold water, mixing until a dough forms. Wrap in plastic wrap and refrigerate for at least 30 minutes.

Prepare the Filling

    Cook the Broccoli Rabe

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add chopped broccoli rabe and season with salt and pepper. Cook until tender, about 5-7 minutes. Remove from heat and let cool.

    Combine the Filling

    In a bowl, combine cooked broccoli rabe, grated Alpha Tolman cheese, toasted sesame seeds, and Calabrian chili jam. Mix well and set aside.

Assemble and Bake the Pithivier

    Roll out the Dough

    Preheat the oven to 375°F (190°C). Roll out the chilled dough on a floured surface into two circles, about 1/8 inch thick.

    Fill and Seal

    Place the filling in the center of one dough circle. Leave a border around the edge. Place the second dough circle on top and seal the edges by crimping with a fork. Cut a few slits in the top for steam to escape.

    Bake

    Transfer the pithivier to a baking sheet lined with parchment paper. Bake for 30-35 minutes or until golden brown. Let cool slightly before serving.
