    Mash the Grains

    In a large mash tun, combine the pale malt and wheat malt with 3 gallons of water. Heat the mixture to 152°F (67°C) and maintain this temperature for 60 minutes.

    Sparge

    After mashing, sparge with an additional 2 gallons of water at 170°F (77°C) to collect the wort in the brew kettle.

    Boil the Wort

    Bring the wort to a boil and add the Hallertau hops. Boil for 60 minutes.

    Cool the Wort

    After boiling, cool the wort quickly using a wort chiller or an ice bath to around 70°F (21°C).

    Pitch the Yeast

    Transfer the cooled wort to a sanitized fermentation vessel and pitch the yeast. Seal the vessel with an airlock.

    Fermentation

    Allow the beer to ferment for about 1-2 weeks at a temperature around 68°F (20°C).

    Bottling

    Once fermentation is complete, dissolve the priming sugar in a small amount of water and add it to the beer. Bottle the beer and cap each bottle.

    Carbonate

    Let the bottles carbonate at room temperature for another 1-2 weeks.

    Chill and Serve

    Chill the beer in the refrigerator for a few hours before serving. Enjoy your homemade Weisse wheat beer!
