Prepare the Filling

    Make the Filling

    In a mixing bowl, combine the pork sausage and chopped Broadbent country ham. Mix well and set aside.

    Make the Sauce Mornay

    In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes, stirring constantly. Gradually whisk in the milk until smooth and thickened. Remove from heat and stir in the grated cheddar cheese, nutmeg, salt, and pepper. Set aside.

Stuff the Olives

    Stuff the Olives

    Using a small spoon or piping bag, carefully stuff each pitted olive with the sausage and ham mixture.

Breading and Frying

    Bread the Olives

    Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs. Dredge each stuffed olive in flour, dip in egg, and roll in breadcrumbs.

    Fry the Olives

    In a deep skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the breaded olives in batches. Fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.

Serve

    Serve the fried stuffed olives hot, drizzled or accompanied by the Sauce Mornay for dipping.
