Ingredients for Marseille Amaro

Method

Preparation Steps

  1. 1

    Make the Syrup

In a saucepan, combine water and sugar. Heat over medium heat, stirring until the sugar fully dissolves. Remove from heat and let it cool.

  2. 2

    Infuse the Botanicals

In a large jar, add dried orange peel, wormwood, gentian root, cinnamon stick, cloves, star anise, cardamom pods, and cooled syrup. Pour in the high-proof alcohol and stir well.

  3. 3

    Let it Sit

Seal the jar tightly and let the mixture sit in a dark, cool place for at least 2 weeks. Shake the jar gently every few days to mix the ingredients.

  4. 4

    Strain and Bottle

After 2 weeks, strain the mixture through a fine-mesh sieve or cheesecloth into a clean bottle, discarding the solids. Add vanilla extract and fresh mint leaves.

  5. 5

    Final Touch

Seal the bottle and let it sit for an additional week for flavors to meld before using. Serve chilled or use in cocktails.
