Preparation

Grape Preparation
Harvest ripe Mauzac Rose grapes and remove any stems or leaves. Wash the grapes thoroughly and crush them to release the juice.

Fermentation
Transfer the crushed grapes into a fermentation vessel. Add the wine yeast to the grape mash and mix well. Allow the mixture to ferment for about 10-14 days at room temperature until fermentation is complete.
Distillation

First Distillation
After fermentation, transfer the liquid to a pot still. Heat the mixture slowly to encourage distillation. Collect the distillate that comes out.

Second Distillation
Redistill the collected liquid to purify it further. Collect the hearts, which is the desired eau-de-vie.
Aging

Maturation
Transfer the eau-de-vie to oak barrels for aging. Allow it to mature for a minimum of 6 months to develop flavors.
