Method

Preparation

  1. 1

    Harvesting the Agave

Harvest the Espadin agave plants, ensuring they are mature (around 7-10 years old). Trim off the leaves and collect the piñas.

  2. 2

    Cooking the Piñas

Place the piñas in an underground oven or pit and cook for 24-48 hours to convert the starches into fermentable sugars.

  3. 3

    Mashing

Once cooked, mash the piñas to extract the juice, either by hand or using a mechanical shredder.

Fermentation

  1. 4

    Fermenting the Juice

Transfer the extracted juice into fermentation vessels. Add the yeast and allow it to ferment for about 5-7 days until bubbling stops.

Distillation

  1. 5

    First Distillation

Distill the fermented juice in a pot still to separate alcohol from the solids.

  2. 6

    Second Distillation

Perform a second distillation to refine the alcohol and enhance purity.

  3. 7

    Filtration

Filter the distilled liquid through activated charcoal to remove any impurities.

Bottling

  1. 8

    Bottling the Derrumbos

Bottle the final product in clean glass bottles and seal for aging.
