Harvesting the Agave
Harvest the Espadin agave plants, ensuring they are mature (around 7-10 years old). Trim off the leaves and collect the piñas.

Cooking the Piñas
Place the piñas in an underground oven or pit and cook for 24-48 hours to convert the starches into fermentable sugars.

Mashing
Once cooked, mash the piñas to extract the juice, either by hand or using a mechanical shredder.

Transfer the extracted juice into fermentation vessels. Add the yeast and allow it to ferment for about 5-7 days until bubbling stops.

Distill the fermented juice in a pot still to separate alcohol from the solids.

Perform a second distillation to refine the alcohol and enhance purity.
