Beef Tartare Preparation

Prepare the Beef
Finely chop the beef tenderloin and transfer it to a mixing bowl. Add the egg yolk, Dijon mustard, capers, finely chopped shallots, salt, and black pepper. Mix well until combined.
Walnut Pesto Preparation

Make the Walnut Pesto
In a food processor, combine walnuts, fresh basil, garlic, Parmesan cheese, olive oil, lemon juice, and salt. Blend until smooth and adjust consistency with more olive oil if needed.
Potato Crisp Preparation

Prepare the Potato Crisps
Slice the potatoes thinly. Toss them in olive oil and salt. Spread them on a baking sheet and bake at 200°C (400°F) for about 20-25 minutes or until golden and crispy.
Assembly

Assemble the Dish
On a plate, place a generous portion of beef tartare. Drizzle umeboshi paste on top. Serve with a dollop of walnut pesto and arrange the potato crisps around the tartare.
