Prepare the Potatoes
Peel and chop the Yukon Gold potatoes into evenly sized chunks.

Boil the Potatoes
Place the chopped potatoes in a large pot, cover with cold water, add 1 tsp of salt, and bring to a boil. Cook for 15-20 minutes or until fork-tender.

Drain and Mash
Drain the cooked potatoes and return them to the pot. Add the butter and heavy cream, then mash until smooth and creamy.

Season
Stir in salt, black pepper, and garlic powder. Mix until well combined.

Garnish and Serve
Transfer to a serving dish, sprinkle with chopped chives, and serve hot.
