Prepare the House Slaw
In a large bowl, combine shredded cabbage, grated carrot, mayonnaise, apple cider vinegar, salt, pepper, and sugar. Mix well and refrigerate for at least 30 minutes.

Make the Lemon Caper Tartar Sauce
In a small bowl, mix together mayonnaise, capers, lemon juice, dijon mustard, salt, and pepper. Adjust seasoning to taste and set aside.

Fry the Shrimp
In a shallow dish, combine cornmeal and flour. Dip each shrimp in buttermilk, then dredge in the cornmeal mixture. Heat vegetable oil in a deep pan over medium-high heat. Fry the shrimp in batches until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

Assemble the Po Boys
Slice the hoagie rolls in half and layer with fried shrimp, house slaw, and sliced tomatoes. Drizzle with the lemon caper tartar sauce. Serve immediately.
