Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into evenly sized sticks, about 1/4 inch thick.

Soak the Fries
Place the cut potato sticks in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Dry the Potatoes
Drain the soaked potatoes and pat them dry with paper towels to remove excess moisture.

Fry the Potatoes
Carefully add a batch of dried potato sticks to the hot oil. Fry until golden brown, about 5-7 minutes. Remove and place on paper towels to drain excess oil.

Season the Fries
While the fries are still hot, sprinkle with salt, black pepper, garlic powder, and paprika to taste. Toss to evenly coat.

Transfer the fries to a serving platter and enjoy immediately.
