    Cook the Pasta

    In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce

    In a cast iron skillet, melt the butter over medium heat. Whisk in the flour and cook for about 1 minute until golden. Slowly whisk in the milk and heavy cream, stirring until the mixture thickens.

    Add the Cheeses

    Reduce the heat to low and add the cheddar, monterey jack, fontina, gouda, parmesan, and cream cheese. Stir until all the cheese is melted and the sauce is smooth. Season with salt and black pepper.

    Combine Pasta and Sauce

    Add the cooked macaroni to the cheese sauce and stir until well coated.

    Prepare the Panko Topping

    In a small bowl, combine panko breadcrumbs, dried herbs, and a pinch of salt. Mix well.

    Assemble and Bake

    Preheat the oven to 350°F (175°C). Sprinkle the panko mixture over the mac and cheese in the skillet. Bake for 20-25 minutes or until the top is golden brown and crispy.
