    Prepare the Ingredients

    Wash the kale thoroughly under running water. Remove the stems and chop the leaves into bite-sized pieces. Mince the heirloom garlic.

    Cook the Bacon

    In a large skillet, cook the applewood smoked bacon over medium heat until crispy. Remove from the skillet and let it drain on paper towels. Once cooled, crumble the bacon into pieces.

    Sauté the Garlic

    In the same skillet with the bacon drippings, add the olive oil and minced heirloom garlic. Sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.

    Add the Kale

    Add the chopped kale to the skillet. Toss to coat the kale with the oil and garlic. Sauté for about 5-7 minutes until the kale is wilted and tender.

    Season and Serve

    Season the sautéed kale with salt and black pepper to taste. Stir in the crumbled bacon just before serving. Enjoy warm!
