    Prepare the Ingredients

    Thinly slice the ribeye steak against the grain. Slice the onion into thin rings.

    Caramelize the Onions

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions, sprinkle with a little salt, and cook, stirring occasionally, until they are soft and caramelized, about 10-15 minutes. Remove from skillet and set aside.

    Cook the Steak

    In the same skillet, add the remaining tablespoon of olive oil. Increase heat to medium-high and add the sliced ribeye steak. Season with salt and black pepper. Cook for about 3-5 minutes, stirring frequently, until the steak is browned and cooked to your liking.

    Combine Ingredients

    Reduce heat to low. Add the caramelized onions back into the skillet with the steak and mix well.

    Melt the Cheese

    Layer the American cheese slices over the steak and onions. Cover the skillet for a minute or until the cheese is melted.

    Assemble the Sandwiches

    Split the hoagie rolls and fill each with the steak and cheese mixture. Drizzle with Texas queso as desired.
