Soup Preparation

    Caramelize the Onions

    In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring frequently, until the onions are caramelized and golden brown, about 30-40 minutes.

    Add Garlic and Deglaze

    Add the minced garlic and cook for an additional 1-2 minutes. Pour in the white wine and scrape the bottom of the pot to deglaze, cooking until the wine reduces by half.

    Add Broth and Herbs

    Stir in the beef broth, thyme, bay leaf, salt, and black pepper. Bring to a simmer and let cook for 20-30 minutes to allow the flavors to meld.

    Prepare Croutons

    While the soup is simmering, prepare rustic croutons by toasting slices of bread until golden brown. Optionally, rub with garlic and drizzle with olive oil.

    Serve the Soup

    Remove the bay leaf from the soup. Ladle the soup into oven-safe bowls, top with croutons, and generously sprinkle Swiss cheese on top.
