    Prepare the Smoked Duck

    If the duck breast is not pre-smoked, smoke it over wood chips for about 1-2 hours until cooked through. Let it rest and then slice thinly.

    Cook the Grits

    In a medium pot, bring 4 cups of water to a boil. Add salt and grits, stirring frequently. Reduce heat and let simmer for about 20-25 minutes until thickened. Stir in Parmesan cheese and set aside.

    Cook the Bacon

    In a skillet, cook the bacon slices over medium heat until crispy. Remove and place on paper towels to drain. Crumble into smaller pieces.

    Cook the Eggs

    In the same skillet with a bit of olive oil, fry or scramble the eggs to your liking.

    Assemble the Dish

    On a plate, serve the Parmesan bacon grits as a base. Top with sliced smoked duck breast and cooked eggs. Sprinkle crumbled bacon on top for added flavor.
