Preparation and Cooking

Prepare the Steak
Take the USDA Prime Ribeye steaks out of the refrigerator and let them sit at room temperature for about 30 minutes. This ensures even cooking.

Season the Steak
Generously season both sides of the ribeye steaks with house smoked sea salt and black pepper mélange.

Preheat the Grill
Preheat your grill to high heat (around 450°F to 500°F).

Rest the Steak
Once done, remove the steaks from the grill and let them rest for about 5 minutes to allow the juices to redistribute.

Prepare the Maître d’ Butter
While the steaks are resting, prepare the maître d’ butter by mixing softened butter with herbs and seasonings of your choice, such as chives, parsley, and lemon zest.

Serve
Slice the steaks against the grain and top with a dollop of maître d’ butter. Serve alongside the pomme aligote.
