Cooking Instructions

  1. 1

    Prepare the Madeira Demi

In a saucepan, bring the Madeira wine to a boil. Reduce heat and let it simmer until it thickens and reduces to half its volume. Set aside.

  2. 2

    Cook the Filet

Season the prime filet with salt and black pepper. In a skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the filet and sear for about 4-5 minutes on each side for medium-rare, adjusting time according to your preferred doneness. Remove from skillet and let it rest for 5 minutes.

  3. 3

    Sauté the Mushrooms

In the same skillet, add 1 tablespoon of butter and the wild mushrooms. Sauté until the mushrooms are tender and golden brown, about 5-7 minutes. Season with a pinch of salt and pepper.

  4. 4

    Prepare the Foie Butter

In a small bowl, mix the remaining butter with the foie gras until well combined. Shape the mixture into a small log and chill in the refrigerator until firm.

  5. 5

    Assemble the Dish

On a plate, place the rested filet. Top it with the sautéed wild mushrooms and a slice of foie butter. Drizzle with the Madeira demi sauce around the plate.
