Mash the Potatoes
Once the potatoes are cool enough to handle, mash them in a large bowl until smooth. Avoid lumps for a better texture in the tots.

Add Dry Ingredients
In the bowl with the mashed potatoes, add the cornstarch, salt, black pepper, garlic powder, onion powder, and paprika. Mix until everything is well combined.

Chill the Mixture
Cover the bowl with plastic wrap and refrigerate the potato mixture for at least 1 hour. This will help the mixture firm up, making it easier to shape.

Shape the Tots
Once the mixture is chilled, take small portions (about 1 tablespoon) and shape them into small cylinders or balls, about 1 inch in length.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). You can test the oil by dropping a small piece of the potato mixture in; it should sizzle immediately.

Fry the Tots
Carefully add the shaped tater tots to the hot oil in batches. Fry them for about 3-4 minutes or until golden brown and crispy. Make sure not to overcrowd the pot.

Drain the Tots
Once fried, remove the tater tots with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.

Serve with Dipping Sauce
Enjoy the tater tots hot, served with optional dipping sauce made from ketchup, mayonnaise, and hot sauce mixed together.
