Prepare the Fajita Veggies

Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the sliced bell peppers and onion. Sauté for about 5-7 minutes until they are tender and slightly caramelized. Season with salt and black pepper.
Assemble the Quesadillas

Layer the Cheese and Veggies
On one half of each tortilla, sprinkle a generous amount of shredded cheese followed by a portion of the sautéed fajita veggies. Fold the tortilla in half to cover the filling.
Cook the Quesadillas

Grill the Quesadillas
In the same skillet, cook the folded quesadillas over medium heat for about 3-4 minutes on each side until golden brown and the cheese is melted. You may need to do this in batches.
Serve the Platter

Arrange and Serve
Cut each quesadilla into triangles and arrange them on a large platter. Serve with a side of tortilla chips and salsa.
