Soaking the Potatoes
Place the sliced potatoes in a large bowl filled with cold water. Let them soak for at least 30 minutes to remove excess starch. This helps achieve a crispier fry.

In a large, heavy-bottomed pot or deep fryer, pour the vegetable oil. Heat the oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

After soaking, drain the potatoes and pat them dry with paper towels. This step is crucial to reduce splattering when frying.

Carefully add the dried potato strips to the hot oil in batches to avoid overcrowding. Fry for about 5-7 minutes, or until golden brown and crispy. Use a slotted spoon to remove them and place on paper towels to drain excess oil.
