    Preheat Oven

    Preheat your oven to 350°F (175°C).

    Cook the Beef

    In a large skillet over medium heat, add the ground beef and chopped onion. Cook until the beef is browned and the onion is soft, about 5-7 minutes. Drain excess fat.

    Season the Beef

    Stir in the ground cumin, chili powder, garlic powder, salt, and black pepper. Mix well and cook for another 2 minutes until the spices are fragrant.

    Prepare the Enchilada Mixture

    In the skillet, add the refried beans and 1 cup of enchilada sauce to the beef mixture. Stir until well combined. Remove from heat.

Assembly and Baking

    Layer the Casserole

    In a 9x13 inch baking dish, spread a thin layer of enchilada sauce on the bottom. Place 4 corn tortillas over the sauce, then spread half of the beef and bean mixture over the tortillas. Sprinkle with 1/3 cup of shredded cheddar cheese.

    Repeat Layers

    Add another layer of 4 tortillas, followed by the remaining beef and bean mixture, and another 1/3 cup of cheddar cheese. Top with the remaining tortillas and pour the rest of the enchilada sauce over the top. Sprinkle with the remaining cheese.

    Bake

    Cover the casserole with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.

    Serve

    Let the casserole cool for a few minutes before serving. Top with sour cream if desired.
