Cook the Quinoa

In a medium pot, bring 2 cups of water to a boil. Add 1 cup of quinoa and a pinch of salt. Reduce the heat to low, cover, and simmer for about 15 minutes or until the water is absorbed. Fluff with a fork and set aside.

Prepare the Black Beans

If using canned black beans, drain and rinse them under cold water. If using dried beans, soak them overnight and cook according to package instructions.

Chop Vegetables

Dice the red bell pepper and avocado. If using fresh corn, cut the kernels off the cob.

Make the Dressing

In a small bowl, whisk together the olive oil, juice from the lime, cumin, salt, and pepper to taste.

Combine Ingredients

In a large bowl, combine the cooked quinoa, black beans, diced red bell pepper, corn, and chopped cilantro.

Dress the Salad

Pour the dressing over the mixture and toss gently to combine all ingredients.
