    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy, about 5-7 minutes. Remove the bacon and let it drain on paper towels.

    Scramble the Eggs

    In the same skillet, add olive oil if needed. Crack the eggs into a bowl, add salt and pepper, and whisk until combined. Pour the eggs into the skillet and cook, stirring gently, until the eggs are just set, about 3-4 minutes.

    Assemble the Tacos

    Warm the flour tortillas in the microwave or on a skillet. Once warm, place the scrambled eggs in the center of each tortilla, crumble the crispy bacon on top, and sprinkle with shredded cheddar cheese. Fold the tortillas in half to form tacos.

    Cook the Tater Tots

    In a separate skillet, heat vegetable oil over medium-high heat. Add the frozen tater tots and cook according to the package instructions, usually about 5-7 minutes, until golden and crispy.

    Chop the fresh tomatoes, red onion, and jalapeño pepper finely. In a mixing bowl, combine the chopped vegetables with fresh cilantro, lime juice, and salt to taste. Mix well and set aside.
