Preparing the Filling

Cook the Tater Tots
Preheat your oven according to the tater tots package instructions. Spread the tater tots in a single layer on a baking sheet and bake for 20-25 minutes until golden and crispy.

Scramble the Eggs
While the tater tots are baking, heat olive oil in a non-stick skillet over medium heat. Crack the eggs into a bowl, add salt and black pepper, and whisk until well combined. Pour the eggs into the skillet and cook, stirring gently, until they are scrambled and just set, about 3-4 minutes.

Combine the Filling
Once the eggs are cooked, remove them from the heat and stir in the shredded cheddar cheese until melted. Add the cooked tater tots to the egg and cheese mixture and gently mix until well combined.
Assembling the Burritos

Fill the Tortillas
Lay out the flour tortillas on a clean surface. Divide the egg, cheese, and tater tot mixture evenly between the two tortillas.

Roll the Burritos
Fold the sides of the tortillas inwards, then roll from the bottom up to create a burrito shape. Make sure the filling is securely wrapped inside.

Serve
Cut the burritos in half if desired. Serve with tortilla chips and salsa on the side.
