Preheat the oven
Preheat your oven to 450°F (232°C).

Mix dry ingredients
In a large bowl, whisk together the all-purpose flour, baking powder, and salt.

Cut in butter
Add the unsalted butter to the dry ingredients. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

Add milk
Pour in the milk and stir until just combined. Do not overmix.

Shape biscuits
Turn the dough onto a floured surface and gently knead it a couple of times. Pat it into a 1-inch thick round and cut out biscuits using a biscuit cutter or a glass.

Bake biscuits
Place the biscuits on a baking sheet and bake for 12-15 minutes, or until golden brown.

Cook sausage
In a large skillet over medium heat, cook the ground sausage until browned and fully cooked, breaking it apart with a spatula as it cooks.

Create roux
Sprinkle the flour over the cooked sausage and stir to combine, cooking for an additional 2-3 minutes.

Add milk
Slowly pour in the milk while stirring continuously to avoid lumps. Bring the mixture to a simmer.

Season gravy
Add salt, black pepper, and red pepper flakes to taste. Continue to simmer until the gravy thickens to your preferred consistency, about 5-10 minutes.
