Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Coat the Calamari
In a bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, and garlic powder. Dredge each calamari ring in the flour mixture until well coated.

Heat the Oil
In a deep pot or frying pan, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Fry the coated calamari rings in batches, cooking for about 2-3 minutes or until golden brown. Use a slotted spoon to remove them and place them on a paper towel-lined plate to drain excess oil.

Add Tomatoes and Seasonings
Stir in the crushed tomatoes, dried oregano, salt, and black pepper. Bring to a simmer and let cook for about 15 minutes, stirring occasionally.

Finish the Sauce
Remove the sauce from heat and adjust seasoning if necessary. Stir in fresh basil just before serving.
