Preparation

    Prepare the Rice

    If you haven't already, cook the Jasmine rice according to package instructions and allow it to cool. It's best to use rice that has been cooked and cooled for at least a couple of hours or overnight.

    Chop the Vegetables

    Dice the carrot, bell pepper, and slice the green onions. Mince the garlic and ginger, and set all vegetables aside.

Cooking

    Stir-Fry the Vegetables

    In a large skillet or wok, heat the sesame oil over medium-high heat. Add the minced garlic and ginger, stirring for about 30 seconds until fragrant.

    Add the Vegetables

    Add the diced carrot, green peas, and bell pepper to the skillet. Stir-fry for about 3-5 minutes until the vegetables are tender but still crisp.

    Add the Rice

    Add the cooked Jasmine rice to the skillet, using a spatula to break up any clumps. Stir well to combine with the vegetables.

    Season the Rice

    Pour in the soy sauce, and season with salt and black pepper to taste. Stir everything together until the rice is evenly coated.

    Add Optional Ingredients

    If using, push the rice mixture to one side of the skillet and pour the beaten eggs on the other side. Scramble the eggs until fully cooked, then mix them into the rice. If using tofu, add the cubed tofu at this point and gently toss to combine.

    Add Green Onions

    Finally, add the sliced green onions and stir-fry for an additional minute, allowing the flavors to meld together.

Serving

    Plate and Serve

    Remove the skillet from heat and transfer the vegetable fried rice to a serving platter. Serve hot as a side dish or main course.
