Preparation

    Season the Steak

    Take the ribeye steaks and generously season both sides with salt and black pepper. Let them sit at room temperature for about 30 minutes to allow the seasoning to penetrate.

    Prepare the Garlic and Herbs

    While the steaks are resting, peel the garlic cloves and lightly crush them. Prepare the fresh rosemary by rinsing and patting it dry.

Cooking

    Heat the Pan

    In a large skillet, heat the olive oil over medium-high heat until shimmering but not smoking.

    Sear the Steak

    Add the seasoned ribeye steaks to the hot skillet. Sear for about 4-5 minutes on one side until a golden-brown crust forms.

    Flip and Add Aromatics

    Flip the steaks over and add the crushed garlic cloves and fresh rosemary to the pan. Sear for another 4-5 minutes for medium-rare, adjusting the time if you prefer it more or less done.

    Baste the Steak

    In the last couple of minutes of cooking, add the butter to the skillet. As it melts, tilt the pan and use a spoon to baste the steaks with the melted butter, garlic, and herbs.

    Rest the Steak

    Remove the steaks from the pan and place them on a cutting board. Cover loosely with aluminum foil and let them rest for about 5-10 minutes to allow the juices to redistribute.

Serving

    Slice and Serve

    After resting, slice the steaks against the grain and serve with the garlic and rosemary drizzled over the top.
