    Cook Udon Noodles

    Bring a pot of water to a boil. Add the udon noodles and cook according to package instructions, usually about 5-7 minutes until they are tender. Drain and set aside.

    Make the Broth

    In a large pot, combine the 4 cups of water with soy sauce, miso paste, mirin, and sesame oil. Bring the mixture to a gentle simmer over medium heat, stirring until the miso paste is fully dissolved.

    Prepare Toppings

    In a frying pan, heat a little oil over medium heat. Sauté the sliced shiitake mushrooms and julienned carrot until the mushrooms are soft and the carrots are tender (about 5-6 minutes). Add the cubed tofu and cook until slightly golden. Set aside.

    In a small pot, bring water to a boil. Gently add the egg and boil for 6-7 minutes for a soft-boiled effect. Remove from boiling water, run under cold water, then peel and set aside.

Assembly

    Assemble the Udon Bowl

    In a bowl, place a serving of cooked udon noodles at the bottom. Pour the miso broth over the noodles. Top with sautéed mushrooms, carrots, and tofu. Halve the soft-boiled egg and place it on top. Garnish with chopped green onions and nori strips. Serve hot.
