Cook Udon Noodles
Bring a pot of water to a boil. Add the udon noodles and cook according to package instructions, usually about 5-7 minutes until they are tender. Drain and set aside.

In a large pot, combine the 4 cups of water with soy sauce, miso paste, mirin, and sesame oil. Bring the mixture to a gentle simmer over medium heat, stirring until the miso paste is fully dissolved.

In a frying pan, heat a little oil over medium heat. Sauté the sliced shiitake mushrooms and julienned carrot until the mushrooms are soft and the carrots are tender (about 5-6 minutes). Add the cubed tofu and cook until slightly golden. Set aside.
