Method

Filling Preparation

  1. 1

    Prepare the Strawberries

Wash the fresh strawberries under cold water. Remove the stems and slice them into halves or quarters, depending on their size.

  2. 2

    Create the Filling Mixture

In a mixing bowl, combine the sliced strawberries, granulated sugar, lemon juice, and cornstarch. Toss the mixture gently to coat the strawberries evenly. Set aside to allow the flavors to combine.

Crust Preparation

  1. 3

    Make the Crust Dough

In a large bowl, whisk together the all-purpose flour, granulated sugar, and salt. Cut the unsalted butter into small cubes and add it to the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

  2. 4

    Add Ice Water

Gradually add the ice water, one tablespoon at a time, mixing with a fork until the dough starts to come together. Do not overmix.

  3. 5

    Chill the Dough

Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Assembling and Baking

  1. 6

    Preheat the Oven

Preheat your oven to 375°F (190°C).

  2. 7

    Roll Out the Dough

On a floured surface, roll out the chilled dough to fit your pie dish. Transfer the dough to the pie dish, trimming any excess.

  3. 8

    Add the Filling

Pour the strawberry filling into the prepared crust, spreading it evenly.

  4. 9

    Bake the Pie

Bake the pie in the preheated oven for 35-40 minutes, or until the crust is golden and the filling is bubbling.

  5. 10

    Cool the Pie

Remove the pie from the oven and let it cool on a wire rack for at least 30 minutes before serving.

Serving

  1. 11

    Add Topping

Top the cooled strawberry pie with whipped cream and sliced fresh strawberries just before serving.
