Prepare the Pork Belly
Preheat your oven to 450°F (230°C). Place the pork belly skin-side up on a cutting board. Pat it dry with paper towels to ensure the skin is as dry as possible.

Season the Pork
Rub the salt all over the pork belly, making sure to get it into any crevices. Then sprinkle the black pepper, garlic powder, onion powder, and paprika evenly over the meat. Drizzle olive oil on top and rub it into the spices and meat. Let it sit at room temperature for about 30 minutes.

Roast the Pork Belly
Place the pork belly on a roasting rack in a baking dish or on a parchment-lined baking sheet. Roast in the preheated oven for 30 minutes.

Reduce Temperature
After 30 minutes, reduce the oven temperature to 325°F (160°C) and continue roasting for an additional 1.5 to 2 hours, or until the meat is tender and the skin is crispy. Check the internal temperature; it should reach at least 190°F (88°C).
