Begin by placing the pork belly on a cutting board, skin side up. Score the skin with a sharp knife in a crisscross pattern, being careful not to cut into the meat.

Season the Pork Belly
In a small bowl, mix together the salt, black pepper, garlic powder, paprika, brown sugar, and fresh thyme. Rub this seasoning mix all over the pork belly, ensuring it gets into the scored skin.

Preheat your oven to 300°F (150°C).

Sear the Pork Belly
In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, place the pork belly skin side down and sear for about 5 minutes until the skin is golden brown.

Turn the pork belly over and add the apple cider vinegar to the skillet. Cover the skillet with aluminum foil and place it in the preheated oven. Cook for 2 to 2.5 hours until the meat is tender.

After cooking, remove the foil and increase the oven temperature to 425°F (220°C). Cook for an additional 20-30 minutes until the skin is crispy and crackling.
