Prepare Pork Belly

    Marinate Pork Belly

    In a bowl, combine soy sauce, brown sugar, minced garlic, and minced ginger. Add the pork belly and coat it thoroughly. Let it marinate for at least 30 minutes.

    Cook Pork Belly

    Preheat your oven to 180°C (350°F). Place the marinated pork belly on a baking tray and roast in the oven for about 25-30 minutes or until the skin is crispy and the meat is tender. Let it rest, then chop into small pieces.

Prepare Fried Rice

    Heat Oil

    In a large skillet or wok, heat vegetable oil over medium-high heat.

    Cook Eggs

    Add the beaten eggs to the skillet and scramble them until fully cooked. Remove and set aside.

    Stir-Fry Vegetables

    In the same skillet, add the chopped green onions and frozen peas and carrots. Stir-fry for about 3-4 minutes until heated through.

    Add the cooked jasmine rice to the skillet. Stir well to combine with the vegetables.

    Add the chopped pork belly, scrambled eggs, sesame oil, salt, and black pepper to the rice. Mix everything thoroughly and cook for an additional 3-5 minutes until everything is heated through.
