Preparing the Broth

Roasting the Aromatics
Begin by preheating your oven to 200°C (400°F). Place the onion and ginger on a baking sheet and roast for about 15-20 minutes until they are charred and fragrant.

Boiling the Bones
In a large pot, add the beef bones and cover them with 4 liters of water. Bring to a boil over high heat. Once boiling, reduce the heat and let it simmer for about 10 minutes. This helps to remove impurities. After 10 minutes, discard the water and rinse the bones.

Simmering the Broth
Return the cleaned bones to the pot, add the roasted onion and ginger, star anise, cinnamon stick, cloves, fish sauce, and salt. Cover with fresh water and bring to a boil. Reduce heat to low and let it simmer for at least 4 hours, skimming off any foam that rises to the surface occasionally.
Cooking the Noodles and Assembling the Pho

Preparing the Rice Noodles
While the broth is simmering, prepare the rice noodles according to package instructions. Usually, this involves soaking them in hot water for about 30 minutes until they are tender. Drain and set aside.

Slicing the Beef
If not already done, slice the beef thinly against the grain. Set aside.

Straining the Broth
Once the broth has finished simmering, strain it through a fine mesh sieve into another pot. Discard the solids and taste the broth for seasoning, adjusting with salt or fish sauce as necessary.

Assembling the Pho
To serve, place a portion of the cooked rice noodles in a bowl, top with raw beef slices (they will cook in the hot broth), and ladle the hot broth over the noodles and meat. Garnish with bean sprouts, fresh herbs, lime wedges, jalapeños, and sliced green onions.
