Making the Broth

    Prepare the Bones

    In a large pot, add the beef bones and cover with cold water. Bring to a boil over high heat, then reduce the heat and simmer for 10 minutes. This will help to clean the bones.

    Rinse the Bones

    After 10 minutes, drain the water and rinse the bones under cold water to remove any impurities.

    Simmer the Broth

    Add the cleaned bones back to the pot along with 4 quarts of water. Peel and quarter the onion and ginger; add them to the pot along with the cinnamon stick, star anise, cloves, fish sauce, salt, and sugar.

    Cook the Broth

    Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for at least 4 hours. The longer you simmer, the more flavorful the broth will be.

    Strain the Broth

    After simmering, strain the broth through a fine-mesh sieve or cheesecloth into another pot, discarding the solids. Taste and adjust seasoning with more fish sauce or salt if needed.

    In a separate pot, bring water to a boil and cook the rice noodles according to package instructions. Drain and rinse under cold water to stop the cooking process.

    Prepare Toppings

    While the noodles are cooking, prepare your toppings. Chop the fresh herbs, slice the jalapeños, and slice the green onions.

Assembling the Pho

    Serve the Pho

    In a bowl, add a portion of cooked noodles. Ladle the hot broth over the noodles, then garnish with fresh herbs, bean sprouts, lime wedges, jalapeños, and green onions.
