Preparing the Chicken

    Trim any excess fat from the chicken thighs and cut them into bite-sized pieces.

    In a bowl, mix the flour, salt, and black pepper. In another bowl, whisk the egg. Dip each piece of chicken first in the egg and then coat it in the flour mixture.

    In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.
