    Prepare the Noodles

    Cook the yakimeshi noodles according to package instructions until al dente. Drain and set aside.

    Cook the Protein

    In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced chicken breast and stir-fry until cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.

    Scramble the Eggs

    In the same skillet, add another tablespoon of oil if needed. Crack the eggs into the skillet and scramble until fully cooked. Remove from the skillet and set aside with the chicken.

    Stir-Fry the Vegetables

    Add a bit more oil if necessary, then add the cabbage, carrot, green bell pepper, and bean sprouts. Stir-fry for about 3-4 minutes until vegetables are tender but still crisp.

    Add the cooked noodles, chicken, and scrambled eggs back to the skillet with the vegetables. Stir gently to combine.

    In a small bowl, mix together the soy sauce, oyster sauce, sesame oil, mirin, and sugar.

    Pour the sauce over the noodle mixture and toss everything together until evenly coated. Add the chopped spring onions on top and stir to combine.
