Fish Preparation

Method

Fish Preparation

  1. 1

    Clean and Prep the Fish

Rinse the whole fish under cold water and pat dry with paper towels. Make sure to remove any scales and entrails if needed.

  2. 2

    Season the Fish

Rub the fish inside and out with salt, black pepper, lime juice, minced garlic, grated ginger, and chopped fresh herbs. Let it marinate for at least 30 minutes.

Hot Oil Mixture

  1. 3

    Prepare the Hot Oil

In a saucepan, heat the vegetable oil over medium heat until hot but not smoking. Add the red chili flakes and allow them to infuse for about 1 minute.

  2. 4

    Finish the Hot Oil

Stir in the chopped green onions and sesame oil. Cook for an additional 1-2 minutes, then remove from heat.

Cooking the Fish

  1. 5

    Fry the Fish

In a large skillet, heat a bit of the hot oil mixture over medium-high heat. Add the marinated fish carefully into the skillet and fry for about 5-7 minutes on each side, or until the fish is cooked through and crispy on the outside.

  2. 6

    Serve with Hot Oil

Once the fish is cooked, transfer it to a serving platter and drizzle the remaining hot oil mixture over the top. Serve immediately with lime wedges.
