    Prepare the Duck

    Score the skin of the duck breast in a crosshatch pattern without cutting into the meat. Season with salt and black pepper.

    Cook the Duck

    In a skillet over medium heat, place the duck breast skin-side down. Cook for about 6-8 minutes until the skin is crispy. Flip and cook for another 3-4 minutes until the meat reaches your desired doneness. Remove from the skillet and let rest before slicing.

    Prep the Rice

    Ensure the cooked jasmine rice is cold. If using leftover rice, break up any clumps and set aside.

    Start Stir-Frying

    In the same skillet, pour out excess duck fat, leaving about 1 tablespoon. Add minced garlic and ginger, sauté for about 30 seconds until fragrant.

    Add Vegetables

    Add diced carrots and green peas to the skillet. Stir-fry for 2-3 minutes until the vegetables are tender.

    Add Rice and Sauce

    Add the cold jasmine rice to the skillet. Pour in soy sauce and sesame oil, stirring well to combine all ingredients. Cook for an additional 3-4 minutes, stirring frequently.

    Push the rice mixture to one side of the skillet. Crack the eggs into the empty side and scramble until cooked. Mix with the rice.

    Finish with Duck

    Slice the rested duck breast and add it to the fried rice. Toss everything together and adjust seasoning with salt and pepper to taste.
