    Cook the Rice

    In a medium pot, combine jasmine rice and water. Bring to a boil over high heat, then reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit for 10 minutes before fluffing with a fork.

    Prepare the Duck

    Score the skin of the duck breasts in a crisscross pattern, being careful not to cut into the meat. Season both sides with salt and black pepper. Heat a skillet over medium heat, place the duck breasts skin-side down, and cook for about 6-8 minutes until the skin is crispy. Flip and cook for an additional 4-5 minutes until cooked to your liking. Remove from heat, let rest for a few minutes, then slice thinly.

    Fry the Vegetables

    In a large wok or frying pan, heat the vegetable oil over medium-high heat. Add the minced garlic and diced onion, stirring for about 1-2 minutes until fragrant. Add the diced carrots and cook for another 2-3 minutes until they start to soften.
