    Prepare Blueberry Filling

    In a large mixing bowl, combine the fresh blueberries, granulated sugar, cornstarch, lemon juice, ground cinnamon, and vanilla extract. Gently toss the mixture until the blueberries are evenly coated. Set aside to let the mixture thicken for about 15 minutes.

    Make the Pie Crust

    In a large bowl, mix the all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter using a pastry cutter or fork until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.

    Assemble the Pie

    Preheat your oven to 375°F (190°C). On a floured surface, roll out one of the dough discs to fit your pie pan. Place the rolled dough into the pan, pressing it down gently. Pour the blueberry filling into the crust, spreading it evenly.

    Roll out the second dough disc and place it over the blueberry filling. You can either cut slits for a lattice effect or simply cover it entirely. Seal the edges by crimping with your fingers or a fork.
