    Cook the Noodles

    Bring a large pot of salted water to a boil. Add the Lo Mein noodles and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    While the noodles are cooking, wash and chop the bell pepper, carrot, and green onions. Cut the broccoli into small florets and trim the ends of the snap peas. Mince the garlic and grate the ginger.

    In a small bowl, combine the soy sauce, sesame oil, cornstarch, vegetable broth, rice vinegar, and sugar. Mix until the cornstarch is fully dissolved.

    Stir-fry the Vegetables

    Heat a large skillet or wok over medium-high heat. Add a splash of vegetable oil. Once hot, add the minced garlic and ginger, stirring quickly for about 30 seconds until fragrant. Add the bell pepper, carrot, broccoli, and snap peas. Stir-fry for about 3-5 minutes until the vegetables are tender but still crisp.

    Add the cooked Lo Mein noodles to the skillet with the vegetables. Pour the sauce over the noodles and toss everything together until well combined and heated through, about 2-3 minutes. Adjust seasoning with additional soy sauce if needed.
