Preparation

1

Prepare the Ingredients

Gather all the vegetables and chop them into small, uniform pieces. Make sure the rice is cooked and cooled (day-old rice works best).

Cooking

2

Heat the Oil

In a large skillet or wok, heat 3 tablespoons of vegetable oil over medium-high heat until it shimmers.

3

Scramble the Eggs

Add the beaten eggs to the hot oil and scramble until fully cooked. Remove the eggs from the skillet and set aside.

4

Sauté the Vegetables

In the same skillet, add the carrots, peas, bell pepper, and half of the green onions. Sauté for about 3-4 minutes until the vegetables are tender.

5

Add the Rice

Add the cooked rice to the skillet with the sautéed vegetables. Stir well to combine everything evenly.

6

Season the Fried Rice

Pour in the soy sauce, sesame oil, salt, and black pepper. Stir-fry everything together for another 3-5 minutes.

7

Combine with Eggs

Add the scrambled eggs back into the skillet and mix thoroughly. Cook for an additional 1-2 minutes.

8

Garnish and Serve

Remove from heat and garnish with the remaining chopped green onions. Serve hot.
