Preparation
Prepare the Pork
Cut the pork tenderloin into bite-sized cubes. Season lightly with salt and pepper.
Chop Vegetables
Dice the red and green bell peppers and the onion into bite-sized pieces.
Prepare the Sauce
In a bowl, combine the soy sauce, rice vinegar, brown sugar, cornstarch, and water. Stir until smooth. Mince the garlic cloves and add them along with the minced ginger to the sauce.
Cooking
Sauté the Pork
In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the pork cubes and sauté until browned on all sides, about 5-7 minutes.
Combine with Sauce
Pour the prepared sauce over the pork and vegetables. Stir well to coat everything evenly. Bring to a boil, then reduce the heat to low and let it simmer for about 5 minutes, or until the sauce thickens.
Add Pineapple
Stir in the pineapple chunks and cook for an additional 2-3 minutes until heated through.
