Prepare the Shrimp

Marinate the Shrimp
In a mixing bowl, combine the shrimp with soy sauce, Szechuan peppercorns, cornstarch, and sesame oil. Mix well to coat the shrimp evenly. Let it marinate for at least 15 minutes.
Make the Szechuan Sauce

Combine Sauce Ingredients
In a small bowl, whisk together garlic, ginger, chili paste, sugar, rice vinegar, and water until well combined. Set aside.
Cook the Rice

Prepare and Cook Rice
Rinse the white rice under cold water until the water runs clear. In a pot, combine the rinsed rice and 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and water is absorbed. Remove from heat and let it sit, covered, for an additional 5 minutes.
Cook the Shrimp and Vegetables

Stir-Fry Shrimp
In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat. Add the marinated shrimp and stir-fry for about 2-3 minutes until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

Add Vegetables
In the same skillet, add sliced bell pepper and broccoli florets. Stir-fry for 3-4 minutes until they are tender-crisp. Add the chopped green onions and stir-fry for another minute.

Combine with Sauce
Return the cooked shrimp to the skillet with the vegetables. Pour the Szechuan sauce over the shrimp and vegetables. Stir well to combine and cook for an additional 2 minutes until everything is heated through.
Serve

Plate the Dish
Serve the Szechuan shrimp mixture over a bed of fluffy white rice. Garnish with extra green onions if desired.
