Prepare the Mixture
In a large mixing bowl, beat the eggs. Add the shrimp, green onions, bean sprouts, soy sauce, cornstarch, sesame oil, salt, and black pepper. Mix until well combined.

Cook the Egg Foo Young
Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat. Pour in a portion of the egg mixture (about 1/4 cup) into the skillet. Cook for 2-3 minutes on each side or until golden brown. Repeat with the remaining mixture, adding more oil as needed.
White Rice

Cook the Rice
Rinse the white rice under cold water until the water runs clear. In a saucepan, combine 1 cup of rice with 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes or until the rice is cooked and water is absorbed. Fluff with a fork before serving.
Gravy Sauce

Prepare the Gravy Sauce
In a small saucepan, combine the chicken broth, soy sauce, cornstarch, and water. Whisk together until smooth. Heat over medium heat, stirring constantly until the sauce thickens. Add sesame oil and black pepper, then remove from heat.
